Once a crack has formed, the two faces of the break rub against each other every time the glass changes dimension. Temperature is the driver. Glass contracts as it cools and expands as it warms, and the rate isn't uniform across a windshield — the edges, which are bonded to the frame, are held in place while the center is free to move. A crack tip sitting in that gradient gets worked back and forth.
Overnight is the worst window for this because the temperature swing is largest and slowest. A car parked outside in a cold climate can drop tens of degrees between evening and dawn. Then in the morning the defroster hits the inside of the glass while the outside is still cold, and that's the moment a lot of cracks suddenly run. The same thing happens in reverse in summer: a hot windshield hit with cold air from the vents, or a hot car washed with cold water.
